Mussels

 

1lb PEI (Prince Edward Island) Mussels

 -4oz of confit garlic

 -2oz of chopped yellow onions

 -2oz of chopped scallions

 -2oz of chopped parsley

 -2oz of chopped tomatoes

 -1oz ginger

 -4oz of vegetable stock

 -2oz of butter unsalted

 -2 sliced lemon wheels

 -salt and pepper to taste (Parmesan cheese and heavy  cream are optional for a creamer taste)

*Saute all items in large saute pan.
